Semi-finals/German Flag Cake

Let us hope the German football team will beat the Italian tonight. Let us hope that we will be able to eat this cake before the fruit is bad. Let us hope that the next last scool week before our class trip will pass fast.

The recipe for this German flag cake is the same as for the Strawberry Cake Light, I just used different fruit.

Except strawberry slices, I used mango pieces for the yellow part and black plums for the top layer.

Strawberry Cake Light

My boyfirend an I have been a couple for 2 ½ years now – 30 months! I know that it is usual to count the whole years, but for me half a year ist a big amount of time, so it deserves a kind of anniversary celebration.

As it is strawberry season again, I decided to bake a light strawberry cake. I must admit, that I had imagined it easier to prepare, but it came out great in the end. The dough is very fluffy and without any fat, just like my mother taught me to make a good sponge cake.

I got the recipe for the cream from www.mychefkoch.de, it is a typical German vanilla cream and fits perfectly the taste of sponge cake and fresh strawberries.

After one day in the fridge, it tastes the best, but you can eat it earlier if you want to.

Strawberry Cake Light

(for one cake pan, Ø 26 cm/10 inches)

Sponge cake:

2 eggs
100 g (½ cup – 1 tbsp.) sugar
75 g (2/3 cup) flour
1 tsp. baking powder
1 pinch salt

Cream:

4 gelatin leaves
1 pck. vanilla pudding powder
6 tbsp. sugar
350 ml (1 ½ cups) milk
200 ml (5/6 cup) whipping cream
200g (7 oz) heavy sour cream

In a small bowl, mix together the flour, baking powder and salt. Set aside.
Preheat oven to 180°C (350°F)
To prepare the sponge cake, stir the eggs in a large bowl. Add slowly the sugar while mixing. Continue stirring for about 2 minutes until the mixture increases its volume and becomes light and fluffy. Now add slowly the dry ingredients.
Put the dough into an oiled pan and bake for about 20 minutes, until a tothpicker comes out clean after testing.

Let the cake cool. Prepare the cream in the meanwhile.
Cream the whipping cream in a bowl. Set aside.
Heat 250ml (1 cup) of milk in a bowl. While the milk is heating, dissolve the pudding powder and the sugar in the rest of the milk. When the heated milk starts to boil, add slowly the pudding solution. Let the liquid thicken until it is creamy – after about 1-2 minutes. When done, transfer the pudding into a medium-sized bowl.

Put the gelatin leaves into a bowl of warm water. Let them suck up some liquid. They will become invisible in the water. Take them out and squeeze them carefully.
When the pudding has cooled down a bit, add the gelatin and stir until it is incorporated. Then add the heavy sour cream. Stir. Add the whipped cream with a whisk. Now you can put the cream onto the cake layer.
Cut the strawberries into slices and spread them on top of the cake. Let it cool in the fridge for about 2 hours.

Hello and welcome to Tiny Kitchen Blog! My name is Radina and I love baking. As you might have guessed from the blog’s name, creating tiny things in the kitchen is my favourite part. Besides, I like to take photos, draw, paint, write and make little charms out of polymer clay in my free time. I thought that it would be fun to combine art and baking. Some friends of mine asked me to share my creations with them and as I noticed that there was positive reputation, I decided to start this blog.

Half a year ago, I found out how delicious cake pops are. I fell in love with them at once. If you have ever visited bakerella.com, you wil know what I’m talking about when I say, that she is an artist. Check her cake pops out, they are just amazing. On her website, I also found recipes for other sweets on lollipop sticks, e.g. cheescake or pie. From that time on,

I felt the urge to create something on my own, put another boring classic cake onto a stick.I found one. So what is this post about? It is about sweethearts. Cute, simple, delicious. You will like it. And it ist easy to put together! All you need is a little time and a strong will to not eat all the batter and chocolate before the pops are done. ;)

The basic for these sweethearts are simple homemade waffles. You’re interested? Then turn your waffle iron on.

Waffles:
(makes about 7-8 waffles)

125 g (4 oz + 1 tbsp.) unsalted butter, room temperature
125 g (½ cup + 1 tbsp.) sugar
2 large eggs
1 tsp. Vanilla extract
250 g (2 cups + 1 tbsp.) all purpose flour
3 tsp. Baking powder
1 pinch salt
250 ml (1 cup + 1 tbsp.) milk

Topping:

150g (5 oz) chocolate, your favourite flavour
100 g (3 ½ oz) nuts, m&m`s, dried cranberries etc.

20 lollipop sticks

Mix together the flour, baking powder and salt. Set aside until needed.

At first, cream the sugar and the butter, until you get a fluffy, white cream. Add one egg at a time and stir in between. Now add the vanilla extract.

Combine with flour and milk, while adding them taking turns. If you put in all the flour at a time, the dough will be quite sticky.
Preheat a waffle iron. After not more than 2 minutes it will be hot enough.
For a waffle like iron like mine, I use a bit less than a full scoop of dough. Close the iron and let bake. Take if out when it turns light golden brown at the edges.

Let the waffles cool completely.

Cut the waffles into smaller pieces like that – you will receive many small hearts.

Melt the chocolate using a bain-marie or your microwave. Place 1 ½ teaspoons of chocolate onto each heart and spread out your topping. Place a lollipop stick into the chocolate. Put one more heart onto the topping so you get a kind of sandwich. Let the chocolate cool until you can eat the pops.
