Some people hate nuts. Some people detest coconut. Mostly those who do not like nuts, do not like coconut, either. And on the other hand those, who like coconut love nuts, as well. Why this? I have no idea, coconuts are not real nuts, actually. They are fruit indeed. But some people I know, do not like coconut in general, but they love bounty bars.

Humans are confusing.
When I noticed this after talks to my friends about their eating habits, I knew that homemade bounty bars would have fans. Yippie :)
I found a very VERY easy recipe on „Lick the Spoon“ http://lickthatspoon.blogspot.de/ .
Five ingredients, one success. Just try it out.
Homemade Bounty
3 cups (700 ml) dessicated coconut
½ tin (about ½ cup or 200 g) sweetened condensed milk
60 – 85 g (1/2-3/4 cup) powdered sugar
1 tsp. vanilla essence
350g (13 oz) dark chocolate, melted
Combine the coconut and condensed milk in a bowl. (I did this with my hands as I didn’t want to spread coconut all over the kitchen with my handheld mixer.) Add powdered sugar, until the mixture is stiff and less sticky. Combine with the vanilla.
Form 24 to 30 bars with your hands. Let them chill in the freezer for at least 45 minutes.

Cover with melted chocolate and serve when hardened.

Couldn’t be easier, right?
As I promised, I will give you some ideas for cupcake decorations. The cupcakes below I made following this recipe =>
http://tiny-kitchen-blog.com/?p=222
They are pretty easy to make, as you do not need to be able to use a decorating bag. Just wanted to give you some ideas.
These two you already know. I coloured the dough with blue food coloring and used cake crumbs as an additional decoration.

Those cuites I made for Easter. Just coloured the frosting and put some sweets on top. Done!

And here is the mini mini version of that cupcakes. Made it using aluminium molds for pralinés.

And the last ones for today are devils and angels. I made them because I was very frustrated, because something had not worked as I imagined it. So I called them ‘frupcakes’ :P.

I hope I could inspire you in some way.
I’m so sorry I did not post anything the last 10 days. I was just… busy and tired. But believe me, I baked a lot and you will receive further information this week. However, many things have happened so far and one important of them was my boyfriends 18th birthday. 18. Hard to believe for me. Now he can drive his car without a parent, buy any kind of alcohol, sign all his documents on his own etc. Well, not THAT impressive to me :P. But it is a birthday, still, so why not just celebrate? According to this occasion, I prepared treats as a dessert for the parties, which made me super happy, of course :). The following pictures will show you the result of my work.
The first party was just a small one and besides, my cake was not the only one. So I decided to make a tiny heart cake using the idea of I am baker. A mini cake with a even smaller heart inside – challenge accepted.

The second party included more guests, so I made two things:
A rainbow cake, which was originally made by Whisk kid, but I used the cake recipe of Love and Olive Oil. Between the layers I put less buttercream frosting and decorated it with beaten heavy cream and cake crumbs. It was definitely worth the hard work – seeing all the people watch the colourful layers shining under the white cream… Which made them want a piece at once.

I wanted the other treat to fit the rainbow cake in some way, so I made colourfil muffins with the same cookie crumbs on top of their frosting. I will share the recipe for the vanilla dough with you later this week, as these are my go-to vanilla cupcakes.

Please keep patient, new posts are coming soon.
